ABSTRACT In this study, to increase the preservation of phenolic bioactive compounds and antioxidant activity in blueberry pulp, heat treatment associated with addition of xanthan gum was used. A commercial mixture of blueberries (Powerblue, Climax and Bluegen cultivars) was added with 0.08% (w/w) citric acid and subjected to heat treatment by direct heating until 90 °C in conventional open pan (OP) and by direct application of steam (AS); both with and without the addition of xanthan pruni (OPX and ASX), followed by pulping. The objective of this work was to characterize the blueberry (Vaccinium spp.) cultivar Climax, Rabbiteye group (Vaccinium ashei Reade). In order to achieve that, a survey with blueberry plants (cultivar Climax), in full production, was conducted during the 2012/13 and 2013/14 seasons in the mesoregion of Pelotas, Rio Grande do Sul State, Brazil. Data regarding the distribution of flower and vegetative buds on branches of two lengths (long and short) was collected. A produção comercial de mirtilos na América do Sul tem passado por mudanças importantes nos últimos anos, em função do aumento da oferta de frutos frescos dos principais países produtores, causando forte queda de preços em plena safra, entre os meses de dezembro e fevereiro. Uma alternativa para esta situação é a produção de mirtileiros de maturação precoce ou muito tardia, fora da época de meia-estação, caracterizada pelos menores preços da fruta. The aim of this research was to study and to model the drying kinetics of the blueberry Vaccinium corymbosum L.) at three temperatures (60, 70 and 80 ºC) with an airflow of 2.0 ± 0.2 m s-1. Modeling of the desorption isotherm was carried out with the GAB (Guggenheim, Anderson and de Boer) equation, showing a good fit to experimental moisture data, giving as a result a monolayer moisture level of 0.084 g water g-1 dm. Newton, Henderson-Pabis, Page, Modified Page and Logarithmic mathematical models were applied in the study and in the modeling of the drying kinetics of this fruit. El arándano azul (Vaccinium ashei Reade) es un producto altamente perecedero, por ello es necesario implementar tecnologías postcosecha que aumenten la vida de anaquel y conserven las propiedades nutrimentales. Dentro de éstas tecnologías se encuentra la luz UV-C (254 nm) que ha sido utilizada en los últimos años en productos hortofrutícolas con la finalidad de reducir la incidencia de microorganismos patógenos y aumentar contenido de fenoles totales.
